Make the most of your SHUUPE with our delicious pancake recipe

We are starting a series of recipes to highlight the versatility of SHUUPE. It is of course super as a shake, but checkout what else makes it great.

 

First up is the fluffy SHUUPE pancakes. Great any time of day!

 

Ingredients:

70g SHUUPE (we used vanilla)
70g gluten-free flour
1 tsp baking powder
2 tbsp Stevia or any natural sweetener
130ml milk or milk alternative
1 egg (optional)
Coconut oil for cooking 
Mixed berries for topping

Natural Greek yogurt for topping

Method:

Mix the SHUUPE, flour, baking powder and Stevia in a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg.

Pour the milk mixture into the flour mixture and using a fork, beat until you have a smooth batter.  Let the batter stand for a few minutes.

Heat a non-stick frying pan over a medium heat and add a knob of coconut oil. When it's melted, add a ladle of batter (or two if your frying pan is big enough to cook two pancakes at the same time). Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen.
