Not only is SHUUPE super as a shake, it can also be used to create many other yummy healthy foods! This time Harry our director makes SHUUPE cookies. It all went pretty well considering 😆
SHUUPE chocolate chip cookies
100g SHUUPE Vanilla
75g rolled oats
30g dark chocolate (vegan if you prefer)
1/2 tsp baking powder
Pinch of sea salt
40g soft brown sugar
1 egg white, or 30g of aquafaba (chickpea water)
1 tbsp peanut butter
1 tbsp coconut oil
In a large mixing bowl, stir together the SHUUPE, oats, dark chocolate, baking powder, salt, and sugar.
In a separate bowl, beat the egg white or aquafaba (using a handheld mixer or by whisking vigorously) until light and fluffy and loose peaks have formed.
To the egg white, or aquafaba, add the almond butter, oil, and vanilla and beat or whisk to combine. (The mixture will deflate a little - that's OK). Then add to dry ingredients and mix until combined. You should have a firm, semi-tacky dough. Cover and chill in the refrigerator for at least 30 minutes.
Preheat oven to 180C and line a baking sheet with parchment paper.
Scoop chilled dough into roughly 2-Tablespoon amounts and form into small discs. Place on a baking sheet with gaps, in case they spread.
Bake for 12-16 minutes, or until the edges are slightly golden brown.
Remove from oven and let cool for 5 minutes.
Make yourself a cup of tea and enjoy at leisure.
